1999 Cabernet Sauvignon
1999 Cabernet Sauvignon
“The 1999 Cabernet Sauvignon…possesses an opaque purple color, loads of tannin, and a big, structured, beefy style with intense, concentrated, highly extracted black fruits intermixed with cedar, plum, coffee, and leather characteristics…[It] is loaded, and the tannin is not excessive when compared to the fruit level.” -Robert Parker, The Wine Advocate (Aug. 2002) 91 points
Tasting Notes
The 1999 has an opaque ruby/purple color and offers a luscious bouquet of ripe blackberry fruits, bitter chocolate, coffee, vanilla and plum aromas. Dense, layered and full-bodied, the wine has exceptional concentration with silky yet powerful tannins.

Vineyard Notes
Seavey’s tenth estate-produced Cabernet, the 1999, was made from grapes that came from vines planted in several different locations of the south-facing hillside vineyard. The 1999 vintage, like the 1997, benefited from a long, cool growing season followed by higher than average temperatures in late September. Harvest during the first three weeks of October allowed for extended hang-time, and this enhanced the wine’s good balance and rich concentration of fruit flavors.
Production Notes
Winemaking style followed classic Bordeaux methods. Harvested at 24 degrees Brix, the juice remained in contact with the skins for an average of 21 days and following malolactic fermentation was aged in French oak barrels (40% new oak). Bottling occurred on May 24, 2001.
