2007 Caravina Cabernet (Sold Out)
2007 Caravina Cabernet (Sold Out)
Tasting Notes
An elegant nose of deep plum, black cherry, caramel and burnt embers followed by dark fruit, cassis, mocha and moist earth flavors in the mouth. The lush and fruit filled palate is balanced by woody notes and tannins that have begun to soften. Hailing from a stellar vintage, this is an ample, fleshy and accessible wine with a silky, smooth finish.

“Readers looking for value in Napa Valley reds need look no further than Seavey’s 2007 Caravina. Last year I wrote that it was the finest second wine they had yet made, and now that it’s in bottle, I can reiterate – it is a sensational effort. Made from 100% Cabernet Sauvignon and aged 19 months in French oak casks, this 525-case cuvee is a sleeper of the vintage. This silky smooth, inky/purple-colored wine offers up notes of roasted herbs, cedar, chocolate, espresso beans, and black fruits. Sweet, round, opulent, textured, and fleshy, this beauty can be enjoyed now or cellared for 15 more years.”
Vineyard Notes
Seavey’s ninth estate-produced Caravina, the 2007, is a remarkable representation of our vineyard’s terroir. The 2007 growing season was one of even temperatures from early spring through fall. We harvested from our Cabernet blocks beginning in the first days of September, with the last micro-block picked on October 13th. The 2007 Caravina was made from grapes that came from vines planted in several different locations of the south-facing hillside vineyard.
Production Notes
Winemaking style followed classic Bordeaux methods. Harvested at optimal ripeness, the juice remained in contact with the skins for an average of 15 days, with malolactic fermentation occurring in barrel. The wine was aged in French oak barrels (40% new oak) and bottled in May 2009.
